- 2 1/2 lb. potatoes, peeled
- 1/2 c. unsalted butter
- 1 c. heavy cream
- 1/4 c. horseradish or to taste
Directions

1Cook the potatoes in boiling water to cover in a saucepan until tender.

2Bring the butter and cream to a simmer in a saucepan.

3Drain the potatoes and place in a mixing bowl.

4Beat at low speed until mashed.

5Add the cream mixture gradually, beating constantly until smooth and creamy.

6Stir in the horseradish, adjusting the amount to suit your taste.

7These are really good with new red potatoes with the skin on.
