Ingredients

  • 1 (8 oz.) sugar-free cake mix (chocolate or white)
  • 1 c. tart cherries with juice (unsweetened and pitted)
  • 3 Tbsp. granulated sugar substitute
  • 1/2 c. raisins (optional)
  • 1/2 c. chopped nuts (optional)
  • Pam
  • sugar-free maple syrup (optional)

Directions

  1. 1
    Preheat oven to 350°.

    Mash cherries and leave in juice. Combine all ingredients and stir until blended.

    Pour into a small square baking pan (spray with Pam).
  4. 4
    Bake at 350° for 25 to 35 minutes or until cake tests done.

    Drizzle sugar-free maple syrup over top.

    Cut into 1-inch squares.

    Makes 64 squares.
