  • 9 lb. medium sized, firm peaches
  • 3 lb. sugar
  • 1 1/2 c. apple-cider vinegar
  • 5 sticks cinnamon, broken
  • 4 whole cloves per peach
  • 1 tsp. ground allspice
  • 1 tsp. grated, fresh ginger

Directions

    Preheat oven to 300°.

    Dip peaches in scalding hot water for a few seconds.

    Slip off skins while hot.
  4. 4
    Stick 4 cloves in each peeled peach and place in roaster.

    Mix sugar, vinegar, cinnamon sticks and allspice in a bowl.

    Mix well and pour over peaches. Cover with liquid.
