  • 4 c. speckled butter beans
  • 1 Tbsp. butter
  • 1 small onion, chopped
  • 1 piece celery, sliced
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. sugar
  • 1 c. tomatoes, cut in small pieces
  • 1 c. water
  • 1 beef bouillon cube
  • 1 carrot, chopped

    Heat butter in large heavy saucepan.

    Cook onion, carrots and celery until softened, but not browned, about 5 minutes.

    Add butter beans with liquid.
