  • 2 tablespoons olive oil
  • 2 cloves garlic small size, minced
  • 1/2 cup onions finely chopped
  • 1 tablespoon coriander ground
  • 1 tablespoon cumin ground
  • 1 teaspoon turmeric ground
  • 796 millilitres tomatoes, canned with juice diced, 1 can
  • 540 millilitres chickpeas (garbanzo beans) 1 can, drained and rinsed
  • 1/2 cup cilantro lightly packed, freshly coasely chopped

Directions

    Heat oil, garlic and onion in a large sauce pan oven medium heat for about 3 minutes.

    Stir in ground coriander, cumin, turmeric and salt to taste.

    Cook until fragrant, about 1 minute.

    Add tomatoes and cook on medium heat, stirring often, about 5 minutes.

    Add chick peas, turn heat into medium or medium low and simmer, partially covered, for about 15 minutes.

    Stirring occasionally.

    Stir in cilantro leaves, about 30 seconds.

    Remove from the heat.

    Serve over rice or pita bread.
