Spiced Pickled Beets

  • 9 lb. small beets
  • 2 c. sugar
  • 1 Tbsp. whole allspice
  • 2 cinnamon sticks
  • 1 1/2 tsp. salt
  • 3 1/2 c. vinegar

    Cook beets until tender.

    Cut in pieces if too large.

    Bring sugar, vinegar, spices and 1 1/2 cups of water to a boil and then simmer for 15 minutes.

    Pack beets in hot sterilized jars.

    Remove cinnamon sticks and pour the boiling liquid over the peeled beets in jar.

    Seal at once.
