- 9 lb. small beets
- 2 c. sugar
- 1 Tbsp. whole allspice
- 2 cinnamon sticks
- 1 1/2 tsp. salt
- 3 1/2 c. vinegar
Directions

1Cook beets until tender.

2Cut in pieces if too large.

3Bring sugar, vinegar, spices and 1 1/2 cups of water to a boil and then simmer for 15 minutes.

4Pack beets in hot sterilized jars.

5Remove cinnamon sticks and pour the boiling liquid over the peeled beets in jar.

6Seal at once.
