Spiced Pumpkin Nut Bread

- 4 c. flour
- 1 Tbsp. pumpkin pie spice
- 2 tsp. baking powder
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1 (15 oz.) can pumpkin
- 2 c. brown sugar
- 1 c. apple juice
- 4 eggs
- 1/4 c. vegetable oil
- 2 tsp. vanilla extract
- 1 c. chopped nuts (divided)
Directions

1Mix flour, spice, baking powder, soda and salt in medium bowl. Mix pumpkin, sugar, juice, eggs, oil and extract in large bowl; mix well.

2Stir in flour mixture and 3/4 cup nuts until moistened. Spoon into two (9 x 5-inch) greased loaf pans.

3Sprinkle remaining nuts over top of loaves.

4Bake in preheated 350° oven for 60 to 70 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire rack for 10 minutes.

5Remove to wire rack to cool completely.
