  • 4 cups chopped Jonagold or other sweet, crisp, juicy apples, unpeeled
  • 2 cups sugar
  • 1 cup golden raisins
  • 1/4 cup rum
  • 1/2 cup vegetable oil
  • 2 eggs, beaten
  • 2 teaspoons vanilla extract
  • 1 cup chopped walnuts
  • 2 cups all purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon freshly grated nutmeg

    Preheat the oven to 325F.

    In a large bowl, combine the apples and sugar.

    In a small bowl, soak the raisins in the rum.

    Meanwhile, butter a 10-inch cast iron skillet.

    In a large mixing bowl, combine the sugared apples, rum-soaked raisins (with any remaining rum), oil, eggs, vanilla, and walnuts.
