- 4 cups chopped Jonagold or other sweet, crisp, juicy apples, unpeeled
- 2 cups sugar
- 1 cup golden raisins
- 1/4 cup rum
- 1/2 cup vegetable oil
- 2 eggs, beaten
- 2 teaspoons vanilla extract
- 1 cup chopped walnuts
- 2 cups all purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1 teaspoon freshly grated nutmeg
Directions

1Preheat the oven to 325F.

2In a large bowl, combine the apples and sugar.

3Let sit for one hour.

4In a small bowl, soak the raisins in the rum.

5Meanwhile, butter a 10-inch cast iron skillet.

6In a large mixing bowl, combine the sugared apples, rum-soaked raisins (with any remaining rum), oil, eggs, vanilla, and walnuts.

7Combine the flour, baking soda, salt, cinnamon, cloves, and nutmeg.

8Add to the apple mixture and mix well.

9Pour into the skillet.

10Bake until golden brown and firm to the touch, 45 to 50 minutes.
