- 1 tablespoon olive oil
- 1 onion finely diced
- 2 tomatoes peeled, diced
- 1 red chili deseeded, chopped
- 1 chapatti
- 1 teaspoon butter
- 1 egg
- 1 tablespoon gouda cheese grated
- fresh parsley leaves to garnish
Directions

1Heat oil in a saucepan. Saute onion for 3-4 mins. Add tomatoes and chili. Season. Add 1/2 cup water and simmer for 2-3 mins.

2Meanwhile, toast chapatti in a frying pan for 1-2 mins per side. Transfer to a serving plate and keep warm. Add butter to pan. Fry egg for 3-4 mins. Top chapatti with tomatoes and fried egg. Sprinkle with cheese and garnish with parsley.
