Ingredients

  • 1 lb. pkg. dried pinto beans
  • water
  • 1 lb. bacon, cut into 1/2-inch pieces
  • 1 lb. smoked sausage, cut into 1/2-inch slices
  • 2 medium onions, chopped
  • 1 small bell pepper, chopped
  • 2 cloves garlic, minced
  • 1/4 c. Worcestershire sauce
  • 1/4 c. firmly packed brown sugar
  • 2 to 3 Tbsp. Cajun seasoning salt
  • 1 to 2 tsp. Tabasco
  • 1 bay leaf
  • 1 can stewed tomatoes

    Sort and wash beans.

    Put in large Dutch oven and cover with water.

    Add 1/2 teaspoon baking soda.

    Bring to a boil and boil for 5 minutes.

    Drain.

    Return to Dutch oven, adding about 6 cups of water.
