- 4 tablespoons butter
- 1 cup yellow onion Chopped
- 1 cup green pepper Chopped
- 2 jalapeno chiles diced fine
- 1 tomato seeded, diced
- 8 beaten eggs Well
- 4 corn tortillas
- 1 cup chedder cheese
- 1 cup salsa
Directions

1Melt butter in large saute pan, add onion and green pepper and cook about 5 min or until onions are translucent.

2Add jalapenos, tomato and eggs, scramble until eggs start to set.

3Stir in tortilla strips.

4Serve topped with cheese; serve the salsa (and flour tortillas and refritos if desired)
