  • 4 tablespoons butter
  • 1 cup yellow onion Chopped
  • 1 cup green pepper Chopped
  • 2 jalapeno chiles diced fine
  • 1 tomato seeded, diced
  • 8 beaten eggs Well
  • 4 corn tortillas
  • 1 cup chedder cheese
  • 1 cup salsa

Directions

    Melt butter in large saute pan, add onion and green pepper and cook about 5 min or until onions are translucent.

    Add jalapenos, tomato and eggs, scramble until eggs start to set.

    Stir in tortilla strips.

    Serve topped with cheese; serve the salsa (and flour tortillas and refritos if desired)
