Spicy Prune Muffins

Ingredients
- 3/4 c. pitted prunes
- 1/2 to 3/4 c. milk
- 1/3 c. butter or margarine, softened
- 1/2 c. firmly packed brown sugar
- 1 large egg
- 2 c. all-purpose flour
- 1 Tbsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 Tbsp. ground cinnamon
- 1/2 tsp. vanilla extract
Directions

1Cook prunes according to package directions.

2Drain, reserving liquid.

3Add enough milk to prune liquid to equal 1 cup; set aside.

4Chop prunes; set aside.

5Beat butter at medium speed with mixer until creamy; gradually add brown sugar.

6Beat well. Add egg, beating until blended.

7Combine flour and next four ingredients; add to butter mixture, alternately with milk mixture beginning and ending with flour mixture.

8Beat at low speed until blended after each addition.

9Stir in chopped prunes and vanilla. Spoon batter into greased muffin pans, filling 2/3 full. Bake at 400° for 22 to 25 minutes.

10Remove from pan immediately. Makes approximately 15 muffins.
