  • 2 or 3 lb. roast
  • 4 garlic cloves, crushed
  • 2 tsp. cumin
  • 4 to 6 potatoes, quartered
  • 1 large onion
  • 6 to 7 strips bacon
  • 3 Tbsp. flour
  • 1/2 tsp. pepper
  • 2 to 3 carrots, quartered
  • 1/2 c. water

    Rub garlic over roast.

    Put bacon on roast.

    Mix flour, cumin and pepper in large roasting bag.

    Add roast and vegetables along with water.

    Cut holes in bag (1/2-inch slits in top).

    Place in shallow roasting pan.

    Bake at 350° for 25 or 30 minutes per pound.
