- 2 whole Yukon Gold Potatoes, Diced
- Salt And Pepper
- 1/2 whole Red Onion, Diced
- 2 cloves Garlic, Minced
- 1 cup Peppers Of Choice ((I Went With Fresno, Jalapeno, Cubanelle, And Red, Yellow And Green Bell Peppers)
- 4 whole Eggs
- 1/2 cups Sharp Cheddar Cheese, Grated
- 2 Tablespoons Chives, Chopped

11. Cook your bacon in a hot cast iron skillet, crumble and set aside for later.

22. To that same skillet, add your potatoes. Season with salt and pepper and cook until soft, about 10 minutes.
