- 1 lb. fresh spinach
- 3 Tbsp. olive oil
- 2 cloves garlic
- 2 tsp. salt
- 1 tsp. dried dill weed
- 2 tsp. white wine vinegar
- fresh ground pepper
- 4 c. water
- 1 1/2 c. long grain white rice
- 1/2 c. firmly crumbled Feta cheese
- 1/2 c. Parmesan
Directions

1Mince spinach.

2Heat olive oil.

3Add spinach and garlic.

4Add salt, dill, vinegar and pepper.

5Cook over medium heat 10 minutes, stirring, all excess liquid should evaporate.

6Bring water to boil; add rice and salt.

7Cook 25 minutes.

8Add spinach and rice.

9Cook once more over low heat, 3 to 5 minutes.

10Toss cheese together and sprinkle over rice.

11Serve.
