- fresh spinach
- 1 c. rice
- olive oil
- 1 lg. onion, chopped
- 1/2 c. water
- 1 can stewed tomatoes
Directions

1In a saucepan, saute onion in olive oil and add 1 cup rice, stirring occasionally for about 20 minutes.

2Add 1/2 cup water and cook on low heat until rice is almost done.

3Wash and chop fresh or canned spinach and add to rice mixture.

4Also to this mixture add 1 can stewed tomatoes.

5Cover and cook for another 10-15 minutes.
