  • 1/2 cup scallions
  • 1 package of frozen artichokes, thawed and drained rough chopped
  • 2 tablespoons diced shallots
  • 2 packages of frozen spinach, thawed and drained (get out as much of the water as possible)
  • 6 large eggs beaten (or egg substitue)
  • 8 ounces Mozerella Cheese
  • 8 ounces Monterey jack cheese 1/2 cup of grated parm cheese
  • 2 tablespoons dried parsley
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 2 tablespoons olive oil
