Spinach Avocado Pasta

  • 6 ounces, weight Pasta (any Kind)
  • 1 Tablespoon Olive Oil
  • 1 cup Raw Spinach
  • 2 cloves Garlic, Minced
  • 1 whole Small Jalapeno, Seeded And Minced
  • 1 whole Avocado
  • 1/2 whole Lemon, Juiced
  • Salt And Pepper, to taste
  • Lemon Zest, To Garnish
  • 1 pinch Red Pepper Flakes

Directions

    Cook the pasta according to package directions.

    Add the olive oil to a small skillet over medium heat, and cook the spinach, garlic, and jalapeno until the spinach is wilted, about 3 minutes.

    In a food processor, combine the spinach mixture with the avocado, lemon juice, salt and pepper, and pulse until smooth.

    Toss with the cooked pasta, and serve with lemon zest, red pepper flakes, and fresh cracked pepper.
