Spinach Bacon Salad

Ingredients

  • 4 c. fresh spinach, rinsed and in bite size pieces
  • 3/4 c. sliced green onions
  • 1/4 c. radishes, thinly sliced
  • 10 bacon strips, in bite-size pieces
  • 1/2 c. cider vinegar
  • 2 tsp. sugar
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. fresh mushrooms, sliced
  • 2 eggs, hard-boiled

Directions

    In a large bowl, mix spinach, onion, radishes, and 1/2 cup mushrooms.

    In a skillet, fry bacon until crisp and remove from skillet.

    Add vinegar, sugar, salt and pepper to skillet.

    Stir ingredients until sugar is dissolved.

    Pour bacon and dressing mixture over salad and toss.

    Garnish with remaining mushrooms and eggs.
