Spinach Balls

Ingredients

  • 6 eggs
  • 2 10 oz packages chopped spinach, thawed, drained and squeezed dry
  • 2 c herb stuffing mix (Pepperidge Farm has great flavor)
  • 1 large onion, grated
  • 1 c freshly grated Parmesan cheese
  • 3/4 c or 1 1/2 sticks of butter at room temperature
  • 1 tsp poultry seasoning

    Preheat oven to 350 degrees.

    Beat eggs lightly in large bowl.

    Add remaining ingredients and blend well.

    Roll into walnut size balls.

    Transfer to baking sheet.

    Bake until golden, about 20 minutes.

    Make about 6-8 dozen.

    Serve hot.
