- 6 eggs, beaten
- 2 (10 oz.) boxes frozen chopped spinach
- 2 c. herbed dressing mix (croutons)
- 1 c. Parmesan cheese
- 2 sticks margarine, softened
Directions

1Cook spinach according to package directions and drain well. Add softened margarine and mix.

2Add cheese and herbed dressing mix.

3Mix well.

4Add eggs and mix.

5Form into bite-size balls. Bake at 350° for 10 to 12 minutes or until firm.

6These may be frozen before baking.

7You may need to add more dressing mix if the mixture is difficult to form into balls.
