Spinach Balls

  • 2 pkg. frozen chopped spinach, drain well
  • 2 c. Pepperidge Farm herb stuffing mix (fine)
  • 4 beaten eggs
  • 1/2 lb. melted margarine
  • 1/2 tsp. salt
  • 1/2 tsp. thyme
  • 1 onion, chopped
  • 1/4 tsp. pepper
  • 1/2 c. grated Parmesan cheese

Directions

    Saute onion in margarine; mix all ingredients into onion (will be wet and moist).

    Shape into balls (size of walnuts).

    If hard to handle, set in refrigerator for awhile.

    Set on cookie sheet, will be a full sheet.

    Bake at 350° for 12 minutes.

    Can be frozen after baked, then heated on low temperature.
