- 1 (10 oz.) pkg. frozen chopped spinach
- 1 c. Italian bread crumbs
- 1/2 c. Parmesan cheese
- dash of nutmeg
- 3 eggs, beaten
- 6 Tbsp. butter, softened
Directions

1Thaw spinach.

2Drain and squeeze out all excess moisture. Blend in other ingredients.

3Shape into small balls (approximately 40).

4Refrigerate or freeze.

5Bake on a lightly greased baking sheet at 350° for 10 to 15 minutes.

6Drain on paper towels.

7Serve with Spicy Mustard Sauce.
