Spinach Bisque Soup

Ingredients

  • 2 (14 oz.) chicken broth
  • 3 (10 oz.) chopped spinach
  • 2 Tbsp. chopped onion
  • 4 Tbsp. margarine
  • 4 Tbsp. cornstarch
  • 4 oz. Cheez Whiz
  • 1 c. grated Cheddar
  • 1/4 c. Parmesan
  • 1 pt. half and half

Directions

    Boil spinach and chicken broth until spinach separates.

    Saute onion and margarine, then add 4 tablespoons cornstarch to make a roux (pasty).

    Add this to soup mix and whisk until smooth.

    Add Cheez Whiz, grated Cheddar and Parmesan cheese.

    Stir well.

    Add half and half.

    Serve with hard roll and slice of ham.
