  • 1 stick butter
  • 1 - 8 oz. sour cream
  • 2 eggs
  • 1 - 8 oz. pkg. frozen chopped spinach
  • 1 box jiffy muffin mix
  • 1 medium onion, chopped tiny
  • 1 pinch salt

Directions

    Melt butter and add sour cream.

    Add dry muffin mix, eggs and onion.

    Add drained spinach.

    Pour in a cast iron skillet.

    Bake like cornbread at 350° for 20 to 25 minutes, or until golden brown.
