- 3 pkg. frozen, chopped spinach
- 1 c. chopped bacon
- 1 c. chopped onions
- 2 eggs
- salt to taste
- pepper to taste
- 8 slices American cheese or equivalent
Directions

1Boil spinach in salt-seasoned water in saucepan until completely thawed. Fry bacon and onions on medium heat in skillet. Crack eggs into large mixing bowl and add 4 slices of cheese, torn into small pieces. Mix thoroughly.

2Add bacon and onions, fried, to mixture.

3Drain boiled spinach and add to mixture; mix again. Salt and pepper to taste; mix thoroughly.

4Pour into 1 1/2 quart casserole dish with lid.

5Top with remaining cheese torn into pieces to cover top of casserole.

6Cover; bake at 375° for 30 minutes.

7Serve hot.
