Spinach Casserole

Ingredients

  • 2 pkg. chopped frozen spinach
  • 3 eggs, separated
  • 1 1/2 c. grated Cheddar cheese
  • 6 oz. cream cheese, softened
  • 2 Tbsp. flour
  • 3 Tbsp. margarine
  • 1 medium onion, chopped
  • 1 Tbsp. lemon juice
  • salt and pepper
  • 1/2 c. Parmesan (save 1/4 c.)

Directions

    Cook spinach according to package directions.

    Drain well. Beat egg yolks and add to the Cheddar and cream cheeses.

    Add flour, margarine, onion, lemon juice, salt and pepper.

    Then add 1/4 cup of the Parmesan.

    Add drained spinach and mix

    thoroughly. Beat egg whites until stiff and fold into the spinach mixture. (Don't add whites until last minute.)

    Spray casserole with nonstick spray.

    Sprinkle remaining Parmesan over top and bake at 400° for 30 minutes or until knife inserted in center comes out clean.
