- 1 c. chopped, cooked spinach
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 c. milk
- salt to taste
- 3 egg yolks, beaten
- 3 egg whites, beaten stiff
Directions

1Make cream sauce with butter, flour, milk and salt.

2Add cooked spinach when cool.

3Stir in yolks; fold in egg whites. Pour into buttered casserole.

4Place in pan of hot water; bake at 350° for 30 minutes.

5Nice served with cheese or mushroom sauce. Serves 6.
