Spinach Casserole

Ingredients

  • 2 boxes frozen spinach or 2 lb. fresh
  • 2/3 stick margarine, melted
  • pinch of dried onion
  • salt, pepper, nutmeg (shake a couple of times)
  • 1 heaping Tbsp. flour, add to margarine
  • 1 c. grated sharp cheese
  • 1/2 c. spinach water, thin out with more spinach juice if too thick

Directions

    Pour boiling water over frozen spinach (or fresh).

    Let water come to boil, turn off heat and let thaw.

    Drain and save juice. (Chop if fresh.)

    Fold spinach in with 3 hard-boiled, cut up eggs. Pour in ungreased casserole.

    Cover with more grated cheese and buttered cornflake crumbs.

    Bake 1/2 hour in 350° oven.
