  • 8 eggs, beaten
  • 1/2 c. sour cream
  • 1 1/2 tsp. salt
  • 1 tsp. grated lemon rind
  • 1/2 tsp. garlic salt
  • 2 (10 oz.) pkg. chopped frozen spinach, thawed and drained
  • 1/2 c. grated Parmesan cheese

    Beat first 5 ingredients together in a bowl.

    Add spinach, mixing well.

    Pour into 8 x 8-inch baking dish.

    Sprinkle cheese over top.

    Bake at 350° for 35 to 40 minutes or until a knife inserted in center comes out clean.
