- 2 c. cooked rice
- 3/4 c. grated Cheddar cheese
- 2 egg, beaten
- 2 Tbsp. chopped parsley
- 1/2 tsp. salt
- 1 lb. fresh spinach, chopped
- 2 Tbsp. seasoned bread crumbs
- 2 Tbsp. oil
Directions

1Combine rice and cheese.

2Combine eggs, parsley and salt.

3Add the mixtures, and stir into the spinach.

4Pour into an oiled 1-quart casserole.

5Top with bread crumbs mixed with oil.

6Bake at 350° for 25 to 35 minutes.
