- 1 Tbsp. corn oil
- 1/4 c. dry bread crumbs
- 3 eggs
- 1 (10 oz.) pkg. frozen chopped spinach, thawed
- 1 (16 oz.) container Ricotta cheese
- 2 c. shredded Mozzarella cheese
- 1/2 c. Romano cheese, grated
- salt and pepper
Directions

1Preheat oven to 350°.

2Coat bottom and sides of an 8-inch baking dish with oil.

3Sprinkle with bread crumbs, coating surface evenly.

4Beat eggs.

5Drain spinach well.

6Add spinach and cheeses to eggs; mix well.

7Add salt and pepper.

8Pour into prepared dish. Bake for 45 minutes or until brown.
