Spinach Casserole

  • 2 c. cottage cheese
  • 1 pkg. frozen chopped spinach
  • 3 eggs
  • 3 Tbsp. flour
  • 2 or 3 dashes nutmeg
  • 1 tsp. mustard or lemon juice

Directions

    Cook spinach in small amount of water.

    Salt and pepper to taste.

    Beat eggs and add 1/4 of spinach water, cottage cheese and flour.

    Season with nutmeg and mustard or lemon juice.

    Add drained spinach.

    Bake in a greased baking dish for 30 minutes at 350°.

    Serves 7 or 8.
