  • 1 (10 oz.) pkg. frozen chopped spinach
  • 2 Tbsp. minced onion
  • 1 c. shredded sharp cheese
  • 3 to 4 oz. mushrooms (fresh or canned), sliced
  • 2 beaten eggs
  • 1/2 c. milk
  • 1/4 tsp. salt
  • dash of pepper
  • soft bread crumbs

Directions

    Cook spinach in water for a few minutes.

    Drain well.

    Drain mushrooms.

    Combine all ingredients, except bread crumbs; turn into greased casserole.

    Top with crumbs.

    Bake at 350° for 1/2 hour, or until knife comes clean and crumbs are brown.
