Spinach-Cheese Pie

Ingredients

  • 2 c. seasoned croutons, coarsely chopped
  • 1/4 c. melted oleo, coarsely chopped
  • 1/4 c. grated Parmesan cheese
  • 1 (10 oz.) pkg. frozen spinach, thawed and drained
  • 1 c. small curd cottage cheese
  • 4 oz. Monterey Jack cheese, cut in 1/2-inch cubes
  • 3 eggs, beaten
  • 1/4 c. chopped onion
  • 2 Tbsp. sour cream
  • 1 clove minced garlic
  • 1/2 tsp. salt

Directions

    Mix croutons and oleo well.

    Press into bottom of a 9-inch pie plate.

    Combine rest of ingredients except Parmesan cheese and spoon over crust.

    Bake at 350° for 35 minutes or until set. Sprinkle with Parmesan cheese and let stand for 5 minutes.
