  • 18 ounces fresh spinach leaves
  • 1 onion (thinly sliced)
  • 1 garlic clove (minced)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 tablespoons flour
  • 2 cups chicken stock
  • 13 cup half-and-half cream
  • 14 teaspoon celery salt
  • salt
  • pepper

Directions

    Saute onions with butter and olive oil until tender, add garlic cook for 1 more minute.

    Add fresh spinach saute until wilted.

    Add flour, mix well and cook for 2 minutes.

    Add Chicken broth, bring to a boil until liquid thickens.

    Cool for a few minutes.

    Pour into a food processor or blender, add half and half cream, celery salt, salt & pepper, mix well until smooth.
