- 1 pkg. frozen chopped spinach
- 3 Tbsp. butter
- 1 small clove garlic, minced
- 2 eggs, well beaten
- 2 Tbsp. Parmesan cheese
- salt and pepper
- 6 c. chicken broth
Directions

1Cook spinach.

2Drain well.

3Melt butter in a large saucepan. Add spinach and garlic; saute 2 to 3 minutes, stirring often. Beat together eggs, cheese, salt and pepper.

4Stir egg mixture into spinach.

5Immediately add broth and bring to a boil, stirring constantly.
