- 2 (10 oz.) pkg. frozen spinach
- 1 lb. ground beef
- 1 medium onion, chopped
- 1 (10 3/4 oz.) can cream of celery soup
- 1 (4 oz.) can mushrooms
- 1/2 c. uncooked instant rice
- 1 c. sour cream
- dash of garlic powder or 1 Tbsp. minced fresh garlic
- salt and pepper
- thick slices Monterey Jack cheese
Directions

1Thaw the spinach and drain the excess water.

2Chop if necessary.

3Brown the meat and onion in a large skillet.

4Add the spinach, soup, mushrooms, rice, sour cream, garlic powder and salt and pepper to taste.

5Mix well and place in a 9 x 9-inch baking dish.

6Cover the casserole with thick slices of Monterey Jack cheese.

7Bake at 350° for 30 minutes.

8Makes 8 to 10 servings.
