Spinach Harvest Salad

- 3 shallots
- 5 oz organic baby spinach
- 1 small Apple
- 1/2 cup raw unsalted pistachios
- 15 oz can no-salt-added Kidney Beans
- 2 tbsp Apple cider vinegar
- 2 tbsp Organic raw white honey
Directions

1Heat a small pan on medium high heat on the stove top

2Peel and slice shallots into small thin slices

3Please shallots in the warm pan

4Stir frequently until shallots are darker and softer, adding a small bit of water if needed to prevent burning

5While shallots are cooking, add spinach to a large bowl

6Dice apple and add to salad and then add pistachios

7Drain and rinse beans and add to salad
-
8Make the dressing: in a small bowl, whisk vinegar, honey and 2 tablespoons of water.

9Add warm cooked shallots and mix well to melt the honey.

10Pour dressing over salad toss well and serve immediately.
