- 1 lb. fresh spinach
- 1/2 c. chopped olives (ripe or stuffed green)
- 1/4 c. grated Parmesan cheese
- 1/4 lb. sliced Mozzarella cheese
- 1 c. canned tomato sauce
- 4 slices white bread, crusts trimmed
- 1/4 tsp. oregano
- 2 Tbsp. melted butter
Directions

1Clean spinach and discard stems.

2Soak cleaned spinach in hot tap water for 10 minutes; drain.

3Place spinach in a greased 9 x 12-inch baking dish.

4Lay Mozzarella slices on top of spinach. Spread tomato sauce evenly over cheese.

5Mix the oregano with the melted butter; brush bread slices on one side.

6Cut bread slices into 1-inch strips.

7Arrange, buttered side up, on mixture.

8Bake, uncovered, for 30 minutes at 350°.

9Serves 6 to 8.
