  • 1 lb. fresh spinach
  • 1 Tbsp. butter
  • 2/3 c. Ricotta cheese
  • 1/2 c. Parmesan cheese
  • 1 Tbsp. onion, chopped
  • 1 egg, beaten
  • 1/8 tsp. nutmeg
  • 20 jumbo shells

    Cook onion in butter until tender.
