- 1 lb. fresh spinach
- 1 Tbsp. butter
- 2/3 c. Ricotta cheese
- 1/2 c. Parmesan cheese
- 1 Tbsp. onion, chopped
- 1 egg, beaten
- 1/8 tsp. nutmeg
- 20 jumbo shells
Directions

1Simmer spinach for 3 to 5 minutes.

2Drain well and chop.

3Cook onion in butter until tender.

4Add spinach and heat.

5Combine egg, cheeses, nutmeg and spinach.

6Stuff 20 cooked shells; cover with sauce.
