Spinach Lasagna

  • 12 oz. lasagna noodles
  • 2 1/2 oz. shredded Mozzarella
  • 12 oz. cottage cheese
  • 12 oz. Ricotta cheese
  • 4 eggs
  • 1 tsp. oregano
  • 1 tsp. fennel
  • 1/4 tsp. salt
  • 1/2 tsp. pepper
  • 2 pkg. thawed frozen chopped spinach, drained
  • 2 (28 oz.) jars spaghetti sauce

Directions

    Mix together eggs, Mozzarella (save 1/2 for topping), Ricotta, cottage cheese, herbs and seasoning.

    Add thawed spinach.

    Spread some tomato sauce on bottom of lasagna pan.

    Layer some noodles (uncooked), then cheese mixture.

    Repeat, making tomato sauce top layer.

    Sprinkle Mozzarella on top.

    Just before baking, pour 1/2 cup water (or more) around edges.

    Seal tightly with foil.

    Bake at 350° for 1 1/4 hours.
