- 12 oz. lasagna noodles
- 2 1/2 oz. shredded Mozzarella
- 12 oz. cottage cheese
- 12 oz. Ricotta cheese
- 4 eggs
- 1 tsp. oregano
- 1 tsp. fennel
- 1/4 tsp. salt
- 1/2 tsp. pepper
- 2 pkg. thawed frozen chopped spinach, drained
- 2 (28 oz.) jars spaghetti sauce
Directions

1Mix together eggs, Mozzarella (save 1/2 for topping), Ricotta, cottage cheese, herbs and seasoning.

2Add thawed spinach.

3Spread some tomato sauce on bottom of lasagna pan.

4Layer some noodles (uncooked), then cheese mixture.

5Repeat, making tomato sauce top layer.

6Sprinkle Mozzarella on top.

7Just before baking, pour 1/2 cup water (or more) around edges.

8Seal tightly with foil.

9Bake at 350° for 1 1/4 hours.
