Spinach Lasagna

  • 10 oz. pkg. frozen spinach
  • 12 lasagna noodles
  • 12 oz. cottage cheese or Ricotta cheese
  • 8 oz. Mozzarella cheese
  • 1 egg
  • 1 (32 oz.) jar spaghetti sauce
  • 1 tsp. oregano leaves
  • 1/3 c. Parmesan cheese
  • 1 c. water
  • dash of pepper

Directions

    Mix unthawed spinach, cheeses, egg, pepper and oregano.

    Spread 1/3 cup spaghetti sauce in oblong baking pan.

    Place four lasagna noodles over sauce.

    Place half of the cheese mixture over noodles. Repeat layer.

    Top with remaining lasagna noodles and remaining sauce.

    Top with one-half cup of Mozzarella cheese.

    Pour the cup of water around edges of pan.

    Cover tightly with foil and bake at 350° for 1 hour and 15 minutes.
