- 8 oz. lasagna noodles
- 2 eggs, beaten
- 1 1/2 lb. Ricotta cheese
- 10 oz. pkg. frozen, chopped spinach, cooked and drained
- 1/2 tsp. salt
- 12 oz. Monterey Jack cheese, shredded
- 1 lemon rind, grated
- 1 Tbsp. lemon juice
Directions

1Cook lasagna in boiling, salted water according to package directions.

2Drain.

3In a large bowl, combine eggs, Ricotta, spinach, salt, lemon rind and lemon juice.
