Spinach Lasagne

  • 6 uncooked lasagne noodles
  • 1 lb. ground beef
  • 1 large onion, chopped
  • 1 jar spaghetti sauce
  • 1 can (8 oz.) mushrooms (undrained)
  • 2 c. Ricotta cheese
  • 1 pkg. (10 oz.) frozen chopped spinach, thawed and well drained
  • 1/4 c. grated Parmesan cheese
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 garlic cloves, crushed
  • 4 oz. Mozzarella cheese slices

Directions

    Cook noodles as directed on package; drain.

    Cook beef and onion until well done; drain.

    Stir in spaghetti sauce and mushrooms; heat to boil.

    Reduce heat to simmer.

    Mix remaining ingredients except Mozzarella slices.

    Pour small amount of sauce on bottom of 13 x 9 x 2-inch baking dish.

    Place 3 lasagne noodles on top of sauce.

    Spread cheese mixture on lasagne.

    Top with a layer of Mozzarella cheese.

    Repeat this step with remaining ingredients.

    Bake at 350° uncovered for 30 minutes or until bubbly.
