Ingredients
- 2 (10 oz.) pkg. chopped spinach
- 4 Tbsp. butter or margarine
- 2 Tbsp. flour
- 2 Tbsp. chopped onion
- 1/2 c. evaporated milk
- 1/2 c. spinach liquor
- 1/2 tsp. salt
- 3/4 tsp. black pepper
- 3/4 tsp. garlic salt
- 10 oz. jalapeno pepper cheese
- red pepper to taste
- salt to taste
Directions

1Cook spinach to directions.

2Drain and save liquor.

3Melt butter in saucepan over low heat and add flour, stirring until blended and smooth but not brown.

4Add onion and cook until soft, stirring frequently.

5Add evaporated milk.

6Cook and stir until smooth and thick, adding spinach liquor as needed to control consistency.

7Add seasonings and cheese which has been cut up in small pieces, stirring until melted.

8Combine with spinach.

9May be served immediately or put in casserole and refrigerate overnight.
