Spinach-Pasta Toss

  • 1 can (28 fl oz/796 mL) no-salt-added diced tomatoes, undrained
  • 1/2 tsp. dried oregano leaves
  • 3 cups multi-grain penne pasta, uncooked
  • 1 cup water
  • 7 cups loosely packed baby spinach leaves
  • 1 cup Cracker Barrel Shredded Part Skim Mozzarella Cheese

Directions

    Bring first 4 ingredients to boil in large saucepan, stirring occasionally.

    Simmer on medium-low heat 10 to 12 min.

    or just until pasta is tender, stirring occasionally.

    Stir in half the spinach; cover.

    Simmer 2 min.

    or just until spinach is wilted.

    Repeat with remaining spinach.

    Serve topped with cheese.
