Ingredients

  • 2 large sweet peppers
  • 4 slices cooked bacon, diced (optional)
  • 14 onion, chopped
  • 1 (15 ounce) can spinach, drained
  • 2 tablespoons breadcrumbs
  • garlic powder
  • salt
  • pepper
  • 12 cup parmesan cheese, shredded

Directions

    Halve the peppers lengthwise, remove seeds and membranes.

    In microwave-able dish, arrange peppers, cut side down.

    Cover & cook on high 2-3 minutes.

    Drain & set aside.

    Mix together all remaining ingredients, leaving 1T parmesan & some bacon pieces for garnish later.

    Pile mixture into pepper cups.

    Cook, uncovered, on high 3-5 minutes, or until heated through.

    Top with bacon garnish & cheese.
