  • 1 package (12 Oz. Size) Frozen Spinach Souffle, Such As Stouffer's
  • 3 ounces, weight Feta Cheese, Divided
  • 1 Tablespoon Lemon Juice
  • 1/4 teaspoons Cayenne Pepper
  • 1/4 teaspoons Salt
  • 8 whole Phyllo Dough Sheets
  • 2 Tablespoons Butter, Melted

Directions

    Preheat oven to 375 degrees F. Microwave spinach souffle according to package directions and add to a mixing bowl.

    Stir in half of feta cheese, lemon juice, cayenne, and salt, mixing well to combine; set aside.

    Lay out 1 sheet of phyllo dough and brush lightly with butter.

    Lay a second sheet on top of the first and repeat the process until all 8 sheets have been stacked and buttered.

    Slice into 6 equal-portioned squares, and gently fit each square into a standard muffin tin.

    Spoon spinach mixture evenly into each phyllo cup, then sprinkle with remaining feta cheese.

    Bake 12-15 minutes until edges of phyllo are golden.
