Spinach Pie

Ingredients

  • 1 (15 oz.) pkg. frozen pie crusts
  • 1 1/2 tsp. flour
  • 2 (10 oz.) pkg. frozen spinach, thawed, chopped and drained *
  • 1 c. scallions/onions, chopped
  • 1 c. Ricotta cheese
  • 4 eggs
  • 1/2 c. Parmesan cheese
  • 1/2 c. baked ham, sausage or chicken, chopped

Directions

    Preheat oven to 425°.

    Brown crust according to directions on package.

    Mix all ingredients in bowl except one egg.

    Pour into browned pie crust and bake for 20 minutes.

    Remove from oven, add pie top and brush with beaten egg.

    Bake for an additional 10 minutes.
